An easy way to use up chicken breasts, and serve alongside or on top of salads.

Recipe Ingredients for Baked Chicken for Salads

5 oz (raw) Chicken
3 tbsp Milled Flax Seed
2 tablespoon Kretschmer Wheat Germ, Regular
1 tsp Oregano
1 lemon yields Lemon Juice
1 dash Salt, Table
1/4 tsp Cayenne Pepper
0.25 tsp Pepper, Black
1 1tsp Olive Oil

Recipe Directions for Baked Chicken for Salads

  1. Zest a lemon into a bowl. In a separate bowl, juice the lemon and add a splash of olive oil. Put chicken in the bowl to marinade for a bit.

  2. In bowl with the zest, add Flax seed and wheat germ, as well as spices. Mix it up.

  3. Heat oven to about 325 degrees F, or 180 C. Cover a baking sheet with foil.

  4. After chicken has soaked up the juice for a bit, shake off excess liquid and dredge in the dry mixture, making sure it is completely covered.

  5. Place a small, elevated rack on the baking sheet (like one from a toaster). Spray the rack, and place chicken on it.

  6. Bake for at least 25 minutes, but adjust time and temperature based on how the chicken looks. If it is starting to burn, reduce heat, or cover slightly with foil.

  7. When cooked, take out and let sit for a minute or two. If eating like that, enjoy! If using as a topping for a salad, let cool for at least 5-10 minutes before chopping it up, otherwise it will start to wilt the salad with residual heat.
