Very filling and healty. I use boneless skinless chicken breasts usually for this recipe.

Recipe Ingredients for Baked Chicken with Rice and Veggies

1 lb chicken breasts
4 tbsp spelt flour
1 egg
1/2 cup 2% milk
1/2 cup breadcrumbs
2 cups rice
4 cups frozen vegetables

Recipe Directions for Baked Chicken with Rice and Veggies

  1. Put flour into 1 bowl with your choice of seasonings (paprika and garlic work well)

  2. Put milk and egg into another and mix well

  3. Put breadcrumbs into a third bowl

  4. Defrost chicken and then dip into all three bowls in this order: flour, milk/egg, and breadcrumbs

  5. Then put the chicken into a greased pyrex glass dish for the oven

  6. Bake chicken in oven at 350 degrees for 40-50 minutes

  7. While waiting, wait 20 minutes then start the rice

  8. Once you get the rice going start steaming the vegetables

  9. To break this down you want to give your rice 15 minutes to cook and the vegetables need 10 minutes to steam
