Recipe Ingredients for Baked Chicken and Rice with Black Beans

1 cup Brown Rice
1 cup, sliced Onions
1/2 medium raw Bell Pepper Green
1/2 cup, chopped Carrots
1 1tsp Olive Oil
2 cups, chopped or diced Chicken, Breast, Meat Only
15 oz Black Beans
10 oz Mild Diced Tomatoes and Green Chilies
1 cup, shredded Cheddar Cheese

Recipe Directions for Baked Chicken and Rice with Black Beans

  1. Preheat oven 350

  2. Prepare rice according to directions

  3. saute onion, bell peeper, and carrots in hot oil 10 minutes

  4. combine rice, onion mis, chicken drained beans, tomatoes and 1/2 cheese

  5. Spoon into baking dish sprayed with PAM

  6. Bake covered 30 minutes uncover sprinkle rest of cheese bake 10 minutes
