Great for making tacos. Meat come right off the bone. can be made skinless. I cook with skin and then take the skin off later to keep the meat moist as it cooks in the oven. Great with corn or flour tortillas.

Recipe Ingredients for Baked chicken quarter for chicken tacos

3 oz Chicken, Thigh - Meat And Skin, Cooked, Roasted
1 oz Chicken, leg - Meat And Skin, Cooked, Roasted
1 large onion
2 tsp chili powder
1 tsp lime juice
2 tsp cayenne pepper
1 1/2 tsp salt
1 tsp pepper
1 tsp garlic powder

Recipe Directions for Baked chicken quarter for chicken tacos

  1. pre heat oven 250

  2. combined dry ingredients for rub into bowl

  3. pour lime juice on chicken and rub in

  4. rub in the dry ingredients on the chicken

  5. slice up one large onion

  6. layer 3/4 onions on bottom of pan

  7. place chicken on top of onions

  8. layer rest of onions onto chicken

  9. put chicken in oven at 350 for 20 minutes

  10. baste top with juices.

  11. after 20 minutes, raise temp to 425 for another 20 -25 minutes.

  12. baste again and take out of oven

  13. Let cool

  14. place chicken on plate

  15. put onion from the bottom on top of chicken or on the side.

  16. serve with tortillas and green or red salsa and fresh chopped onion and cilantro.
