Chicken with noodles or rice casserole. Makes 8 servings with 1/2 cup noodles or rice each, plus one thigh. May substitute white meat if desired.

Recipe Ingredients for Baked Chicken and Noodles Casserole

8 chicken thighs
21 oz cream of chicken soup
10 1/2 oz cream of mushroom soup
1 1/2 cups lowfat milk
8 ounces noodles

Recipe Directions for Baked Chicken and Noodles Casserole

Use low salt soups if desired. Mix soups and milk together. Mix in noodles OR 1 cup dry rice. Top with chicken and use salt and pepper to taste. Bake at 350 for one hour 15 min. Check for doneness of chicken before serving. Servings are 1/2 cup noodles/rice, and one thigh or breast.
