Recipe Ingredients for Baked Chicken and Mushrooms

16 oz. boneless skinless chicken breast
1/4 tsp paprika
1/2 pound sliced fresh mushrooms
1 tbsp butter
1/2 cup chicken broth
1/2 cup diced sweet onion
2 garlic cloves
1/2 tsp. salt
1/8 tsp. pepper
3/4 cup shredded part-skim mozzarella cheese

Recipe Directions for Baked Chicken and Mushrooms

  1. Arrange chicken in a 13" x 9 in" baking dish coated with non-stick cooking spray. Sprinkle with paprika.

  2. Bake at 350 degrees for 15 minutes.

  3. In a nonstick skillet, saute mushrooms in butter for 5 minutes. Add the broth, onions, garlic, salt and pepper. Bring to a boil.

  4. Pour over chicken, return to the oven for 10 - 15 minutes longer, or until chicken juices run clear.

  5. Top with cheese, bake for 3 - 5 minutes or until cheese is melted.
