Recipe Ingredients for baked chicken with lemon and capers

2 breasts chicken (boneless, skinless)
2 c. chicken broth
3 tbsp. lemon juice
1 c. bread crumbs
2 tbsp olive oil
2 eggs (beaten)
2 tbsp capers
1 onion (diced)

Recipe Directions for baked chicken with lemon and capers

  1. beat eggs

  2. heat olive oil in frying pan to medium

  3. pre-heat oven to 375

  4. dip chicken in eggs, then bread crumbs

  5. brown in oil

  6. add onions to frying pan--saute for 2 minutes

  7. remove chicken and onions to a casserole dish

  8. add chicken broth, lemon juice and capers

  9. bake for 45 minutes
