A little labor intensive, but well worth it!

Recipe Ingredients for Baked Chicken Lasagna Rolls

7/8 lb. boneless skinless chicken
2 c. light cottage cheese
1 1/2 c mozzarella cheese
1 egg
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/4 c fresh parsley, chopped
1/4 c grated Parmesan cheese
10 oz lasagna noodles
16 oz tomato sauce, more to cook noodles in

Recipe Directions for Baked Chicken Lasagna Rolls

  1. Preheat oven to 375 degrees.

  2. Bake chicken for about 35-40 minutes.

  3. Cook lasagna noodles.

  4. Shred or put chicken in food processor.

  5. Mix chicken, cottage cheese, 1 c of the mozzarella, egg, salt, pepper, garlic, parsley, and Parmesan.

  6. Lay noodles out on plastic wrap.

  7. Cover bottom of baking dish with tomato sauce, reserving some to pour on top of the rolls. (I usually buy 2 8 oz cans, although most of it stays in the pan after baking.)

  8. Place chicken mixture on top of each noodle, not too thick. If possible, leave a little bit of the bare noodle on the end.

  9. Roll up each noodle, towards the bare end.

  10. Place noodles in a baking dish, seam side down.

  11. Pour additional tomato sauce on top of rolls, and sprinkle remaining mozzarella on top.

  12. Bake for about 20 minutes.

  13. These freeze really well!
