Nice comfort food recipe. Not included in Ingredient list is 2 cups of salsa. Two lower the sodium I use fresh salsa but you can use 2 cups of regular salsa instead. And the nutrition counter didn't notice that I used fat free cream cheese

Recipe Ingredients for Baked Chicken Enchiladas

4 oz cream cheese, fat free
1/4 cup sour cream
2 cups cheddar cheese
2 cups chicken breast, chopped
1/2 teaspoon cumin
1/4 teaspoon dried oregano
1/4 teaspoon cayenne
4 scallions
14 whole wheat tortillas

Recipe Directions for Baked Chicken Enchiladas

  1. Preheat oven to 325 degrees

  2. In a medium bowl cream together the cream cheese and sour cream. Stir in 1/2 cup of the salsa. Stir in 1 cup of the shredded cheese

  3. In a second bowl, toss together the chicken, corn, cumin cayenne, 1/2 the scallions. Add the chicken mixture to the creamed mixture and stir to combine.

  4. In a baking dish, spread 1/2 cup of the salsa over the bottom. Place about 1/3 cup of the filling on a tortilla, roll up and transfer to the baking dish, seam side down. Repeat for remaining tortillas.

  5. Pour remaining salsa over enchiladas, spreading to coat all of them. Spreading to coat all of them. Sprinkle remaining cheese over the top. Enchiladas may be made up to this point 12 hours in advance.

  6. Tranfer to preheated oven and bake for 20 - 25 minutes until hot and bubbly. Sprinkle with remaining scallions and serve warm. Enchiladas may be reheated, covered with aluminum foil.
