Indian style chicken curry cooked in the oven

Recipe Ingredients for Baked Chicken Curry

1 1/2 lb Whole chicken, skinless
1 cup onion, minced
1 tsp garlic, paste
1 tsp ginger, paste
1/2 tsp turmeric, powder
1 tsp cayenne pepper
1 tsp garam masala, ground
1 cup tomato, diced
1/2 tsp salt
2 potatoes, medium
1 tsp cilantro, chopped

Recipe Directions for Baked Chicken Curry

  1. Skin whole chicken. Cut into 8 pieces. Marinate chicken in all the ingredients except potatoes.

  2. Skin the potatoes and cut each into 4 pieces. Soak the pieces in cold water for about 5 minutes.

  3. Place the potatoes in the bottom of an oven proof dish. Take the marinated pieces of chicken and place them carefully over the potatoes. Pour any excess marinade over the chicken mixed in with 1/2 a cup of water.

  4. Cover the dish with foil and bake in a pre-heated oven at 400 degrees for 15 minutes. Remove from the oven and uncover the dish. Sir and mix the chicken and potatoes and return to oven. Cook uncovered at 400 degrees for 25 minutes. Leave in the oven for a couple of minutes.

  5. Remove and stir up the pieces again. Garnish with cilantro and serve hot with boiled vegetables, steamed rice or roti.
