Chicken breasts in tomato sauce original calls for 2 tablespoons raisins, 1/2 teaspoon sugar, 1/2 teaspoon salt, and 1/2 teaspoon mace Can be thickened with 2 T cornstarch & 2 T water Serve over rice

Recipe Ingredients for Baked Chicken Country Captain

3 lbs boneless skinless chicken breast
4 cloves garlic
2 tablespoons olive oil
2 tablespoons curry powder
28 oz tomatos
1 large onion
1 large bell pepper
1 tablespoon italian seasoning
1/2 teaspoon black pepper

Recipe Directions for Baked Chicken Country Captain

  1. Place breasts in 9x13 baking pan

  2. Dice onions and peppers & spread over chicken ( add raisins here if using)

  3. In small sauce pan heat oil and add garlic, cook 1 min

  4. Add curry cook and stir 1 min

  5. Stir in undrained tomatos,sugar(if using),salt & mace(if using), italian seasoning, and black pepper

  6. Bring to simmer then pour over chicken

  7. Cover and bake at 350 degrees for 1 hr

  8. Sauce Thickened

  9. Measure pan juices and add water to make 2 cups, transfer to sauce pan. In a small bowl slurry cornstarch & water, add to juices and bring to boil, stir and cook 2 min.
