Recipe Ingredients for Baked Chicken Chimichangas

2 c chopped cooked chicken breast
8 oz rotel tomatoes
1 c shredded sharp cheddar cheese
1/2 c green onions, chopped,
1 tsp ground cumin
1 tbsp garlic powder
1 tsp onion powder
1/4 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
10 serving Flour Tortillas Soft Taco
2 tbsp butter, melted

Recipe Directions for Baked Chicken Chimichangas

  1. 1. Preheat oven to 400 F.

  2. 2. Combine chicken, rotel tomatoes, cheese, green onions, cumin, garlic powder, onion powder, salt, pepper, and oregano in a medium-size bowl. Divide the mixture evenly among center of tortillas. Fold opposite sides over filling, then roll up from the bottom and place, seam sides down, onto a baking sheet. Brush with melted butter.

  3. 3. Bake until golden brown, about 25 minutes. Garnish with additional cheese and green onions; serve salsa on the side.

  4. Leftovers can be frozen and reheated in the microwave.
