Recipe Ingredients for Baked Chicken Cakes Parmigiana

2 cups chopped cooked chicken breast
1/2 cup Italian Classics Bread Crumbs
2 egg whites
1/2 tsp italian seasoning
1/2 tsp garlic powder
1/4 cup light mayonnaise
4 tbls skim milk
1/3 cup Diced Tomatoes dried
2 tbls Parmesan, Grated Cheese [1032
1 cup pizza sauce

Recipe Directions for Baked Chicken Cakes Parmigiana

  1. Preheat oven to 400 degree. Line a cookie sheet with aluminum foil and spray with vegetable oil.

  2. In medium bowl, mix bread crumbs, egg, milk, mayonnaise, Parmesan cheese and garlic powder and seasoning. Stir in chicken.

  3. Shape chicken mixture by about 1/4 cupfuls into 10 cakes.

  4. Place cakes on cookie sheet and press down just a little. Spray with vegetable oil.

  5. Bake 10 minutes, turn over and bake 10 more minutes.

  6. Warm pizza sauce and serve over cakes.
