This is a twist on a middle-eastern recipe. Chicken is baked with diced tomatoes, herbs and cream of chicken. Low fat and easy.

Recipe Ingredients for Baked chicken breasts with diced tomatoes and herbs

9 ounces chicken breast
2 tablespoons lemon juice
1/2 teaspoon of ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground cardamom
1/2 teaspoon of dried cilantro
2 garlic cloves (thinly slivered)
14 1/2 ounces of diced tomatoes
10 3/4 ounces of cream of chicken (campbell's)

Recipe Directions for Baked chicken breasts with diced tomatoes and herbs

  1. Heat oven to 400 degrees

  2. Place chicken breasts on a baking dish.

  3. Sprinkle breasts with lemon juice.

  4. On a separate bowol combine the ground cumin, coriander, cardamom, cilantro and salt on bowl. Sprinkle the spices on the chicken breasts evenly.

  5. Add the slivered garlic cloves.

  6. On a separate bowl mix the can of diced tomatos and the cream of chicken until well blended. Poor the mixture on top of the chicken breasts.

  7. Bake the breasts for 25 minutes.
