Recipe Ingredients for Baked Chicken and Artichoke Risotto

12 oz Freshly Frozen Boneless Skinless Split Breasts
1/2 cup, chopped or diced Onions
6 tbsp Minced Garlic
1.5 cup Rice, White, Long-grain, Regular
14 oz Artichoke Hearts
1 cup Shredded Carrots
1 Teaspoon Thyme
0.5 tsp Pepper, Black
2 cup (8 fl oz) Soup, Chicken Broth Or Bouillon
0.5 cup Panko Breadcrumbs
0.25 cup Parmesan, Grated Cheese
1 tbsp Lemon Juice, Canned Or Bottled
1 tbsp Butter
0.33 oz Wine

Recipe Directions for Baked Chicken and Artichoke Risotto

  1. Preheat oven to 350 degrees

  2. In an extra large skillet, cook chicken onion and garlic until no longer pink, over medium high heat. Drain fat and add rice, cook and stir for one minute.

  3. Drain artichoke hearts and add along with carrots, thyme and pepper. Stir in broth and wine. Bring to a boil. Transfer mixture to an ungreased 2 1/2 quarte casserole. Bake, covered, about an hour or until rice is tender, stirring once halfway through baking.

  4. In a small bowl, combine panko and cheese, stir in melted butter and lemon juice. Sprinkle over casserole bake uncovered an additional 10 minutes until mixture is heated through and crumbs are lightly browned. Let stand 5 minutes before serving.
