I've had breaded versions of this meal, but find it just as delicious with a little salt and pepper. It's fairly high in sodium, but had tons of vitamin C.

Recipe Ingredients for Baked Cauliflower

395 g Cauliflower
25 g Extra Virgin Olive Oil
1 g Black Pepper
4 g Sea Salt

Recipe Directions for Baked Cauliflower

  1. Break the cauliflower into small-ish peices. keeping or removing the stems is a personal preference (I remove).

  2. Place the cauliflower, black pepper, salt and extra virgin olive oil in a plastic bag and toss to coat.

  3. Spread evenly on a baking sheet and cook for 25 minutes at 415 degrees, turning twice.
