baked zucchini and eggplant casserole

Recipe Ingredients for baked casserole

1 spray olive oil
1 sliced eggplant
1 chopped zucchini
1 chopped red pepper
1/2 tsp oregano
1/2 tsp garlic powder
1 pinch red pepper flakes
1 pinch salt
1 pinch black pepper
4 small tomatoes
8 ounces fat free cream cheese
1/4 c light soy milk
2 tbsp tomato paste
4 tbsp bread crumbs
4 tbsp grated parmesan cheese

Recipe Directions for baked casserole

Toast all veggies for 20 min. at 475 degrees on a cookie sheet sprayed with olive oil spray..then turn them out into a olive oil sprayed casserole dish,melt cream cheese, tomato paste, and milk on low heat then pour over veggies, top with bread crumbs and parmesan, bake for 15 min on 375.
