Recipe Ingredients for baked blueberry cheesecake

175 g digestive biscuits
75 g butter
175 g blueberries
450 g low fat cream cheese
150 g sugar
4 eggs

Recipe Directions for baked blueberry cheesecake

  1. crush biscuits and stir into the melted butter

  2. line the bottom of your tin with the biscuit mixture

  3. put the blueberries on reserving a few for for the top after baking

  4. beat cream cheese sugar 1tsp vanilla extract and eggs together until smooth and creamy

  5. pour mixture on top of blueberries

  6. bake in oven @ 180 degrees for 40 minutes or until it is pale golden and should only wobble very slightly in the middle

  7. allow to cool then remove from the tin and place on a serving platter

  8. place reserved blueberries on top and dust with icing sugar.
