Recipe Ingredients for baked black beans

1 1/2 teaspoon olive oil
8 slices turkey bacon
1/4 yellow onion, diced
1/2 medium carrot, peeled and grated
1/2 stalk celery, trimmed and chopped
1 garlic cloves, minced
1 pepper jalapeno
1/4 teaspoon salt
1/2 cup chicken broth
1/8 c brown sugar
1/8 cup ketchup
1 1/2 tbsp dark molasses
1 teaspoons Dijon mustard
1 tablespoons apple cider vinegar
1/8 tsp black pepper
15 oz Black Beans - 50% less sodium
1/8 cup chopped cilantro

Recipe Directions for baked black beans

  2. Preheat oven to 400 degrees F. Heat the oil in a large skillet over medium-high. Add the bacon, onion, carrot, celery, garlic, jalapeņo and salt.

  3. Cook 7 to 8 minutes, until the vegetables start to soften. Reduce the heat to low and add the broth, brown sugar, molasses, mustard, ketchup, cider vinegar and black pepper. Stir until well combined. Add the beans and stir to coat.

  4. Transfer the beans to an 8-inch-by-8-inch pan. Bake uncovered 45 minutes to 1 hour, until the beans are hot and a dark crust begins to form on the top. Sprinkle with cilantro and serve immediately.
