Vegetarian baked beans using tamarind in place of worcestshire sauce, and maple syrup in place of molasses.

Recipe Ingredients for Baked Beans

30 oz Blackeye Peas
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1/2 medium (2-1/2" dia) Onions
2 tbsp Syrups, Maple
1 dash Pepper, Black
1 dash Salt, Table
1/2 tsp Spices Mustard Powder
0.13 cup, packed Sugars, Brown
1 tbsp Tamarind Sauce
1 tsp Vinegar red wine
2 tbsp Olive Oil

Recipe Directions for Baked Beans

  1. Sautee onions and peppers in oil.

  2. Add beans, liquids, and spices.

  3. Sautee several minutes more.

  4. Put in baking dish, cover and bake @ 350 for one hour (?).
