Vegetarian version of baked bean recipe from Joy of Cooking. Add a ham hock during the initial bean cooking for some pork flavor or add some chopped bacon to the baking beans.

Recipe Ingredients for Baked beans

2 cups dried white beans
2 tbsp molasses
2 tbsp ketchup
1 tbsp dry mustard
1/2 cup chopped onion
1 tsp curry powder
1/2 tsp cider vinegar
1 tbsp worcestershire
1 tsp salt

Recipe Directions for Baked beans

  1. Soak beans overnight in water to cover

  2. Boil beans in water for 30 minutes.

  3. Mix all other ingredients in a bowl. Add cooked beans and 1/2 cup of bean boiling water and stir together.

  4. Add bean mixture to a greased baking pan.

  5. Bake in a 250 degree oven for 6 to 8 hours covered. Uncover beans for last 1/2 to 1 hour of cooking. Add some water to the beans if they appear to be drying out.
