Can be cooked in the oven or crock pot. This recipe contains a decent amount of iron for a vegetarian dish. I deleted the ketchup and upped the molasses for a smokier taste. It also adds a jolt of iron and a slight reduction in sugar.

Recipe Ingredients for Baked Beans (Joy of Cooking)

3 cups pinto beans, dried
1 onion, chopped
1/2 cup molasses
1 tbsp dry mustard
1 tsp salt
1/2 cup water
1/2 tsp vinegar
1 tsp curry powder
1 tbsp Worcestershire sauce

Recipe Directions for Baked Beans (Joy of Cooking)

  1. Soak beans overnight

  2. Cover soaked beans in water, bring to a boil and then simmer until tender.

  3. Preheat oven to 250 degrees

  4. Drain the beans, reserving the cooking water

  5. Add other ingredients.

  6. Mix well and pour into greased baking dish or crock pot

  7. Cover and bake for 6-9 hours
