Recipe Ingredients for Baked Barley

3 tablespoons Smart Balance
1 medium onion
1 cup uncooked pearl barley
1/2 cup walnuts
1/2 cup parsley
1 teaspoon salt
4 cups chicken broth
1 cup chopped celery
1 medium zuchini
1 teaspoon garlic powder

Recipe Directions for Baked Barley

  1. Melt butter. Stir in onion, barley,celery and walnuts. Cook and stir until barley is lightly browned. Mix in parsley. Season with salt and pepper. Transfer mixture to a 2 quart dish, and stir in broth.

  2. Bake 1 hour and 15 minutes in preheated oven, or until liquid has been absorbed and barley is tender.
