ever try a giant, moist oatmeal cookie?? well, try this and you have! :)

Recipe Ingredients for Baked Banana Oatmeal

2 bananas
2 cups rolled oats
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
1 mashed banana
1 1/2 cups skim milk
1 teaspoon vanilla
1 tablespoon brown sugar

Recipe Directions for Baked Banana Oatmeal

  1. Combine dry ingredients (oats, baking powder, salt) in one bowl, and the wet ingredients in another (egg, mashed banana, milk, vanilla).

  2. Pour wet ingredients into the dry and mix well.

  3. Line an 8" pan with parchment paper

  4. Layer some banana slices on the bottom. Pour batter into the pan and top with remaining banana slices.

  5. Bake at 375 for 26 minutes. Then, increase heat to broil, sprinkle oatmeal with brown sugar and broil for 3-4 minutes.
