Baked Banan Nut Oatmeal Recipe

old fashioned oatmeal baked with ripe bananas and pecans.

Recipe Ingredients for baked banan nut oatmeal

5 cups water
3 cups old fashioned oats
1 cup organic nonfat milk
1 egg
3 bananas (ripe)
3 tbsp brown sugar
1/2 c chopped pecans

Recipe Directions for baked banan nut oatmeal

  1. Preheat the oven to 375 degrees.

  2. Mash the bananas very well and set aside.

  3. Bring 5 cups of water to a boil, add oats and salt and turn down the heat. Cook until all water is absorbed and oats are done. Remove from heat and transfer to a large bowl.

  4. Stir in milk. Crack the egg in a separate bowl. Temper the egg by scooping a small spoonful of hot oatmeal into the egg bowl and whisking the two together. Do this 3 or 4 times until the egg is at the same temp as the oatmeal.

  5. Once tempered, combine the egg with the rest of the oatmeal.

  6. Pour 1/2 the oatmeal into a greased 913 pan. Sprinkle oatmeal with 2 tablespoons brown sugar. Place dollops of mashed banana on top of the brown sugar and then spread evenly with a spatula.

  7. Sprinkle pecan pieces on top of the banana.

  8. Pour the rest of the oatmeal on top of the banana and carefully spread it so that it covers all the bananas and nuts.

  9. Sprinkle the top layer with remaining brown sugar.

  10. Bake for 30 to 35 minutes or until set.

  11. Let stand for 5 minutes before serving.
