Aubergines oven bakes with spicy tomato topping.

Recipe Ingredients for Baked Aubergines with Tomatoes

1 Small(120 g) Aubergine
1 Small(120 g) Aubergine
2 plum tomato Tomatoes, Red, Ripe
0.5 oz Peppers
1 clove Garlic
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Baked Aubergines with Tomatoes

  1. Thickly slice aubergine and put in the oven to cook.

  2. Chop the tomatoes and heat on the hob with the garlic and chilli, season to taste.

  3. When the aubergiens have started to brown, spoon tomato mixture on top and srpinkle parmesan on top of the tomato.

  4. Bake for another 5 minutes.
