A lighter version of Arroz con Pollo because it is baked and not fried. Added ingredients not able to include in analysis is 3 tablespoon Goya Sofrito, 2 tablespoons Goya Cilantro cooking base and Goya Sazon con Azafran, neither adds any calories but will add extra sodium, and about 5 extra grams of carbs.

Recipe Ingredients for Baked Arroz con Pollo (Chicken and Rice

1 cup water
1/4 c. chicken stock
3/4 cup uncooked long-grain white rice
1 lb chicken drumsticks, skinless

Recipe Directions for Baked Arroz con Pollo (Chicken and Rice

Spray an oval 9x11 casserole dish. Combine first 3 ingredients along with the cilantro cooking base and sofrito and sazon con azafran in casserole dish mix well. Place drumsticks on top of this mixture. Cover and bake at 350 deg for 60 minutes or until chicken is no longer pink and rice is done.
