There's some tofu, some beans, and some veggies in a little bake bowl.

Recipe Ingredients for Bake...thing

1 tbsp soy sauce
1/2 tsp ginger
6 grams
50 ml lemon juice
200 ml water
266 grams extra firm tofu
200 grams eggplant
535 grams baby bok choy
385 grams cauliflower
400 grams beans
225 grams onion
140 grams carrot
260 grams beans

Recipe Directions for Bake...thing

  1. Mix these ingredients together.

  2. soy sauce

  3. ginger

  4. chicken stock

  5. lemon juice

  6. water

  7. To make vegan, use vegetable stock instead of chicken.

  8. Chop the tofu into bite size chunks, then add the tofu to the marinade, leave to marinate for at least an hour. I froze the tofu first to give it a spongy, meaty texture.

  9. Layer the veggies until you reach the top of the baking tray/bowl. I used oven-to-table pie dishes.

  10. Layer the tofu chunks and beans on top.

  11. Layer baby bok choy on the top, to create a sealed off egg shape.

  12. Cover with foil and bake at 240 degree celcius for 45 minutes.

  13. Peel off foil and serve.
