Marinated skirt steak with brussell sprouts, topped with mushrooms and onions

Recipe Ingredients for Baja Citrus Skirt Steak with Garlic Roasted Brussel Sprouts

6 oz ( 1 serving ) Beef, Plate, Inside Skirt Steak
1 tbsp Olive Oil
1 cup sliced Mushrooms, Brown, Italian, Or Crimini
1/2 medium (2-1/2" dia) Onions
1 cup Brussels Sprouts, Cooked
1/2 oz Grill Mates Marinade

Recipe Directions for Baja Citrus Skirt Steak with Garlic Roasted Brussel Sprouts

  1. Either the night before, or an hour before place the skirt steak in a ziplok baggie and add the marinade mix, 1 tbspn olive oil, 2 tspn's vinegar and 2 tspns's water. Shake and seal and place in fridge.

  2. Trim and cut the brussell sprouts in half. Place them on a large baking sheet spread out and coat with 1 tspn of olive oil. Add salt, pepper and minced garlic on top. In a 400 degree oven, roast for 30 to 40 minutes.

  3. During the last ten minutes of the brussell sprouts cooking at sliced mushrooms and onions to a pan with 1 tspn olive oil. cover and let cook down until transluscent. stir occasionally.

  4. On indoor grill pan, medium high heat, add the skirt steak. 4 minutes on each side for medium rare.

  5. Serve with mushroom and onion mix over steak.
