Spicy, sauteed, roasted eggplant and tomato

Recipe Ingredients for Baingan Bartha

16 oz eggplant
3 tbsp oil
1 1/2 tbsp cumin seed
3 cloves garlic, crushed
2 tbsp ginger, crushed
1 1/2 cup onion, chopped
2 pepper jalapeno
1/2 tsp salt
3 1/2 cups tomatoes, chopped
1 1/4 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
3/4 tsp turmeric
1/4 cup coriander leaves, chopped

Recipe Directions for Baingan Bartha

  1. Preheat oven to broil at 500 degrees. Coat eggplant with oil and broil until burned and skin blistered, about 20-25 min.

  2. Do prep work for all but the coriander and eggplant.

  3. Heat oil in sautee pan on medium high.

  4. Add cumin seeds and sautee for a few seconds.

  5. Reduce heat to medium, and add onion, green chilies and salt. Sautee until onions are translucent, not browned. Add garlic and ginger towards the end.

  6. Then add tomatoes, turmeric, ground coriander, ground cumin, and garam masala. Sautee, partially covered, until tomatoes are soft and slightly mashed. Chop and add coriander leaves toward the end.

  7. While tomatoes are cooking, peel the skin off the eggplant and remove the stem. Chop eggplant coarsely, and add to tomato mixture. Sautee a few minutes more. Serve with warmed Naan.
