Recipe Ingredients for baguettes from the bread machine

2 1/4 t yeast
3 c bread flour
2 T rye flour
1 1/2 t salt
1 1/4 c water
1 t lemon juice

Recipe Directions for baguettes from the bread machine

  1. add all ingre according to bread machine directions (tho ive never had any trouble just throwing it all in in this order) And set machine to dough (or pull out after 1st rise). Remove and let rest 5 min before shaping.

  2. Lighlty sprinkle work surface with flour, place dough on floured surface, shape into a ball. If sticky sprinkle with flour. Cut into 2 equal pieces. Roll dough into 10x6" rectangle. Fold dough in half length-wise. With the side of your hand, form a deep crease. Flod dough over at crease and pinch seams to creat a tight cylinder. Rol baguette over so seem is on bottom. Quickly roll back n forth working from center out to stretch to desired length and shape and to form pointed ends. Place on cornmeal sprinkled baking sheet. With a very sharp knife cut top w 1/4" deep slices every 2"s. Cover with clean kitchen cloth. Repeat with remailing dough. Preheat over 450. Bake 25-30 min, or til golden brown. Remove from oven and cool on wire rack.
