Recipe Ingredients for Bacon Summer Squash Au Gratin

2 large Squash, Summer, All Varieties
5 serving Original Real Premium Bacon Crumbled
6 oz Mexican Style Four Cheese
5 tbsp Parmesan, Grated Cheese
5 serving VIGO ITALIAN BREAD CRUMB
0.5 medium raw Onion Red
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe

Recipe Directions for Bacon Summer Squash Au Gratin

Slice squash in 1/8 inch rounds, discard ends and lay out flat on a cookie sheet lined with paper towels. This will absorb the water that will be extracted after you salt them. Salt the squash liberally and keep layering squash and towels. it will take a bout 45 minutes for most of the water to come out. While waiting thinly slice tomatoes and onion and set aside for later. Butter the bottom of 6x9x3" casserole dish and sprinkle 1/2 inch of bread crumbs in the bottom. Check squash and pat dry. Alternately layer squash, onion, bacon, cheese and tomatoes. After the tomatoes start over with bread crumbs again only sprinkling them. Top layer should be squash, bacon and cheese. Bake in a 400 degree oven for about 45 minutes. Then broil the top at 300 for about 10 minutes. Let cool a little and cut and serve this like lasagna. Enjoy!
