This is a great Sunday morning breakfast. Found the original recipe on line and "doctored" to make a tad bit healthier.

Recipe Ingredients for Bacon and Spinach Quiche

2 eggs
2 egg white
2 cups skim milk
4 ounce shredded Cheddar cheese, divided
1 ounce of Parmesan cheese, grated
1/4 cup finely chopped onion
2 (strips) bacon, crumbled
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon paprika
10 ounce frozen chopped spinach, cooked and drained
1/2 tomato, thinly sliced
1/2 tsp salt
1/2 tsp pepper
1 (200g) pie crust

Recipe Directions for Bacon and Spinach Quiche

  1. In a large bowl, mix first 14 ingredients together.

  2. Pre-bake pie crust for 5 minutes.

  3. Add egg mixture to the pie crust and bake for 35 minutes in 400 degree oven.

  4. Cover edges of pie crust with foil to prevent over browning. Uncover last 10 minutes.
