Bacon, spinach and gruyere quiche

Recipe Ingredients for Bacon, spinach and gruyere quiche

4 cups baby spinach, raw
8 ounces bacon
2 large eggs
2 large egg yolks
1 cup light cream
1 cup nonfat milk
1/2 teaspoon salt
1/2 teaspoon ground white pepper
3 1/2 ounces gruyere cheese
1 1/4 cups unbleached flour
1/2 teaspoon salt
1 tablespoon sugar
3 tablespoons vegetable shortening
4 tablespoons unsalted butter
4 tablespoons water

Recipe Directions for Bacon, spinach and gruyere quiche

  1. Prepare pie crust

  2. Put cheese, blanched spinach and cooked bacon into crust, cover with egg mixture

  3. Bake until set
