Recipe Ingredients for bacon and pumpkin soup

14 oz lean pork
250 g pumpkin
100 g spinach
100 g adzuki beans
1 cup cabbage
1 onion, chopped
1 T oil
1 stock cube

Recipe Directions for bacon and pumpkin soup

  1. Soak the beans overnight, then rinse and drain.

  2. Cut a small pumpkin in half, prick it with a fork and put face down in the microwave for a bit until cooked.

  3. Meanwhile chop and fry the onions in a tablespoon of oil.

  4. Boil the pork (actually a ham shank with all the skin and fat removed) in about 8 cups water in a large pan. Skim any fat off the surface and discard.

  5. Blend the cabbage and pumpkin and put into the pan with the other ingredients.
