Make this every week!! if you roast the potatoes rather than frying, it's less oil AND the potatoes are drier and make your fritatta drier, which is good!

Recipe Ingredients for bacon, potato and leek fritatta

6 eggs, medium
25 grams bacon
45 grams leek
2 green onions
2 potatoes
1 1/2 tbsp. olive oil
4 tsp. salt
2 tsp. pepper

Recipe Directions for bacon, potato and leek fritatta

  1. take out eggs so that they can get closer to room temp

  2. rinse then microwave potatoes for 3 minutes

  3. slice medium medallions

  4. put half of your olive oil down on a baking sheet or dish and lay out your potatoes and leeks, drizzle the rest of the olive oil over the top, add some salt and pepper and roast your potatoes and leeks with your broiler

  5. while they are roasting, cut much of the fat from your bacon (but not all, you need some) and brown bacon in an oven safe skillet (the same skillet, you will put the frittata in)

  6. while the bacon and potatoes are cooking,

  7. break your eggs into a bowl, add salt and pepper and whisk

  8. when the bacon is brown, remove and lower

  9. the heat

  10. take potatoes from oven

  11. make sure the bacon grease is coating the bottom of the pan, add potatoes, then break up and add three of your four strips of bacon

  12. add the egg and allow for the mixture to start to set

  13. once mixture has started to set, add the rest of the bacon and chopped green onions

  14. baked under the broiler until the mixture is pretty dry and the frittata begins to pull away from the side of the pan

  15. slice with a spatula into six slices!
