I had no idea bacon would be so good in a pita. But it is! Wish I'd thought of this years ago...

Recipe Ingredients for Bacon Pita Pockets

100 grams pita pockets (2)
30 grams reduced sodium center cut bacon
4 tbsp hummus
1/4 lb yellow onion, finely chopped
7/20 lb green pepper, finely chopped
25 grams baby spinach
1/8 lb mushrooms, sliced
1/10 lb jalapeno, minced
1/2 tsp garlic, minced
1 tsp black pepper

Recipe Directions for Bacon Pita Pockets

  1. Cut open pita pockets 1/2 way.

  2. Spread 1/2 the hummus into each pita.

  3. Place pitas in toaster oven on low heat.

  4. Fry bacon in a frying pan until browned and chewy-texture.

  5. Pour out 1/2 the bacon fat. Cut bacon into 1/2" pieces. Place on paper towels to drain.

  6. Fry the onion in the remaining bacon grease until glossy.

  7. Add remaining vegetables, garlic, and pepper, and fry.

  8. Reintroduce bacon to vegetables and heat through.

  9. Spoon bacon mix into toasted pitas. Fold over gently to close opening.

  10. Serve with baby carrots, sliced cucumbers, or other veggies for dipping in MORE hummus.
