Really, you can have bacon & muffins. Although terrific when hot, these store and freeze well.

Recipe Ingredients for Bacon Muffins

6 strips bacon, cooked
4 oz bacon grease
2 cups whole wheat flour
2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
1 egg
2 tbs maple syrup

Recipe Directions for Bacon Muffins

  1. Heat oven to 400 degrees

  2. Lightly grease a 12-cup muffin pan OR use silicone muffin cups (no additional grease required).

  3. Chop bacon & fry

  4. Remove from grease, reserve 1/4 (4oz) of grease

  5. In a large bowl, combine flour, baking powder, salt and bacon bits.

  6. In a small bowl, combine buttermilk, egg, and maple syrup.

  7. Add bacon grease to flour mixture and stir to combine.

  8. Add buttermilk mixture to flour mixture and stir to combine.

  9. Spoon into muffin cups.

  10. Bake for 20-25 minutes.
