Quick, easy omelette without the bacon!

Recipe Ingredients for Bacon-less Omelette

2 eggs
1 tbsp green peppers, chopped
1 tbsp onion, chopped
1 tbsp cheese, shredded

Recipe Directions for Bacon-less Omelette

  1. Chop your onion and green pepper to desired size; (I prefer small chunks). Place on a heated skillet and cook, (depending on your taste).

  2. Add the eggs to a bowl and beat, adding salt and pepper to taste.

  3. Remove the peppers and onions from the skillet and pour the egg mix into the hot skillet. Cook the eggs until there is very little uncooked egg. Add the vegetables and cheese; fold over twice. Turn the skillet off and let the omelette cook an additional minute.

  4. Remove from skillet. Serve.
