Found this on BBC Good Food. Good for using up the last of the bacon.

Recipe Ingredients for Bacon, Leek &Potato Soup

2 Rasher Bacon
2 tbsp chopped Onions
1 medium raw Leeks
1 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
14 grams Stock Cubes
3 fl oz Milk

Recipe Directions for Bacon, Leek &Potato Soup

  1. Fry onion and bacon until onion is soft. Add leek and potato, cover and fry gently for 5 minutes, shaking every so often so the mix does not catch.

  2. Add 300ml of stock, cover and simmer for 20 minutes until the veg is soft.

  3. Leave to cool slightly then put it through a mixer in batches until smooth. Return to the pan and add the milk, heat through and serve.
