Recipe Ingredients for bacon kumara cakes and dip

2 medium Sweetpotato
5 large Onions, Spring Or Scallions
400 grams Pork, Cured, Canadian-style Bacon, Grilled
2 tbsp Parsley
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe
100 grams Creme Fraiche
2 tbsp Basil, Fresh

Recipe Directions for bacon kumara cakes and dip

  1. boil and mash the kumara

  2. finesly slice the spring onions and dice the bacon

  3. fry up the spring onions

  4. add the bacon and stir until browned

  5. add onion/bacon mis to the kumar mash with parsley

  6. make into patties and place, covered, in fridge to rest

  7. add the creme fraiche, finely diced tomatoes and basil and lix well to make dip

  8. take patties out of fridge, lightly dust in cornflour and fry off, 4-5mins each side

  9. serve with sauce
