Bacon Eggs and potatoes the way Nana made them

Recipe Ingredients for Bacon and eggs skillet

6 eggs
3 ounces bacon
2 medium potatoes
1 tbsp olive oil

Recipe Directions for Bacon and eggs skillet

  1. Add olive oil to pan, heat on medium. Chop bacon into tiny pieces, add to pan and cook, stirring occasionally, while you chop potatoes.

  2. Add potatoes while bacon is cooking as you cut them up. Cook them with the lid on until browned. You can add onion if you like. When potatoes are browned and cooked through, add eggs, stir around and cook through. Serve with rye toast.
