Recipe Ingredients for BACON & EGG STUFFED POTATO

1 medium POTATO
1/2 tbsp MARGARINE, WE PREFER SOY BUTTER
2 EGG WHITES
1 tsp MINCED GARLIC, WE PREFER OLIO DO PANNE
7/20 oz COOKED BACON
1 tbsp PARMESAN CHEESE
1/3 cup COOKED KALE

Recipe Directions for BACON & EGG STUFFED POTATO

  1. COOK POTATO FOR 6 MINUTES IN THE MICROWAVE. IN AN OVEN SAFE DISH SPLIT OPEN THE POTATO. SMEAR ON SOY BUTTER. DROP IN UNCOOKED EGG WHITES, CHOPPED KALE, COOKED BACON AND PARMESAN CHEESE.

  2. BAKE IN THE OVEN FOR 20 MINUTES OR UNITL EGG WHITES HAVE PROPERLY COOKED THROUGH.
