A hearty stew for the autumn seasons. Small servings with a fresh bread as an appetizer, or double servings for a main course.

Recipe Ingredients for Bacon Corn Chowder

1 onion
2 leeks
2 tbsp olive oil
1 can evaporated milk
2/3 c. heavy cream
1 tbsp. chicken bouillon
1 can creamed corn
1 tsp ground pepper
2 cups water
3 potatoes
1 red pepper

Recipe Directions for Bacon Corn Chowder

In a large saucepan, sautee finely chopped onion and 2 chopped leeks in left over bacon fat or olive oil for 4-5 minutes. Add evaporated milk, heavy cream, better than bouillon, creamed corn and peppercorn. Bring to a boil and reduce heat to simmer. Cover and cook 15 minutes. Add water and raise the heat. Add potatoes and red pepper. Reduce the heat and simmer for 30 minutes. Serve hot with fresh bread.
