Lightened up with egg substitute and turkey bacon. Great way to use up left over vegetables. Most of the calories come from the pie crust. I am sure this can be made crustless.

Recipe Ingredients for Bacon & Cheese Quiche

1 Pie crust, deep dish, uncooked
2 3/4 cups egg substitute, egg beaters
1/4 cup onion, red chopped
1/2 cup sweet pepper, red, chopped
1/2 cup zucchini, chopped
1/4 cup mushrooms, chopped
8 servings turkey bacon, 8 slices, fried and chopped
1 cup monterey jack cheese, shredded

Recipe Directions for Bacon & Cheese Quiche

Stir fry vegetables in a skillet coated with Pam cooking spray. Set aside. In a large bowl, combine egg substitute, vegetables, bacon and cheese; mix well. Pour egg mixture into pre-made pie shell. Bake at 350 degrees until egg mixture is set in the middle. Should be firm like a custard pie. Can test by inserting a knife into center of pie. Knife should come out clean.
