Easy, healthy way to have a cheap breakfast while on-the-go! The original recipe called for using 5 large eggs, but I use an egg substitute instead to cut out the cholesterol. (Courtesy of the South Beach Diet.)

Recipe Ingredients for Bacon & Cheese Breakfast Cups

4 ounces crumbled turkey bacon or turkey sausage
1/2 green bell pepper, chopped
1/4 onion, chopped
1 cup egg substitute
1 can (12 ounces) sliced mushrooms , drained
1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese

Recipe Directions for Bacon & Cheese Breakfast Cups

  1. Preheat the oven to 350F. coat a 6-cup nonstick muffin pan with cooking spray or line with paper baking cups.

  2. In a medium nonstick skillet over medium-high heat, cook the bacon, pepper, and onion for 5 minutes, or until the bacon is no longer pink. Spoon the mixture into a bowl and cool slightly. Stir in the eggs and mushrooms. Evenly divide the mixture among the prepared muffin cups. Sprinkle with the cheese.

  3. Bake for 20 minutes, or until the egg is set.
