My own creation from what was lying around

Recipe Ingredients for Bacon, Arugula and Cheese Frittata

3 medium yukon gold potatoes, shredded
4 tablespoons butter
1/4 tsp black pepper, freshly ground
1/2 tsp sea salt
2 cups arugula
1 medium tomato, chopped
2 ounces cheese
1 three strips of bacon
8 eggs
1/4 cup 2% milk

Recipe Directions for Bacon, Arugula and Cheese Frittata

Rinse and pat dry potatoes. Working in batches, sauté the potatoes in butter until almost cooked. Line the bottom of a large skillet that has been lightly coated with cooking spray with the sautéed potatoes. Top with arugula, tomatoes, shredded cheese and crumbled bacon. Whisk the eggs and milk and pour the mixture over the potatoes arugula combination. Bake the frittata in the oven for 15 minutes at 375 degree. Cut into 4 wedges and serve.
