Recipe is from "Backpack Gourmet"(with some modifications), intended to be dehydrated. 55 g is 1/2 cup each cheddar and mozzarella

Recipe Ingredients for Backpack Breakfast #1

4 lb potatoes
1 large onion
3 tbsp canola oil
12 oz turkey sausage
1 tsp salt
1 tsp pepper
8 large eggs
55 g cheddar cheese
55 g cheese

Recipe Directions for Backpack Breakfast #1

  1. Brown sausage and spices in large dutch oven, or buy pre-cooked spicy sausage of your choice.

  2. Grate potatoes and onion in food processor; put into collander and press out excess moisture. Then heat oil in large dutch oven and cook 10 minutes. Add sausage and cook 10 more minutes on low heat.

  3. Beat eggs and stir into potatoe mix along with grated cheese.

  4. Scoop into a greased 10x13 casserole dish. Bake 20 minutes at 350F or until golden brown.

  5. Spread onto 4 dehydrator trays, dry at 145F for about 4-6 hours.
