Recipe Ingredients for Baby Spinach Omelet

2 eggs
1 cup baby spinach, torn
1 1/2 tbsp grated Parmesan cheese
1/4 tsp onion powder
1/8 tsp ground nutmeg
1 salt and pepper to taste

Recipe Directions for Baby Spinach Omelet

  1. Beat the eggs.

  2. Stir in baby spinach and cheese

  3. Season with onion powder, nutmeg, salt, and pepper

  4. Spray small skillet with cooking spray

  5. Cook egg mixture 3 minutes over medium heat until partially set

  6. Flip and continue cooking 2 to 3 minutes

  7. Reduce heat to low and continue cooking 2 to 3 minutes to desired doneness
