Recipe Ingredients for Baby Portobellos with Pasta

13 1/4 oz whole wheat pasta
10 oz crimini mushrooms
2 tbsp olive oil
1 medium red bell pepper, chopped
2 garlic cloves, minced
15 oz tomatoes, pureed
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Baby Portobellos with Pasta

  1. Prepare pasta according to package directions. Drain, return to pan and cover to keep warm.

  2. Wash mushrooms, trim stems, and cut into quarters. Combine 1 tbsp oil and mushrooms in non-stick skillet over medium-high heat. Add 1/2 tsp salt and 1/4 tsp pepper. Cook and stir about 2 minutes. Remove mushrooms and keep warm.

  3. Add remaining oil, bell pepper, and garlic to skillet. Cook and stir over medium heat until bell pepper is tender. Add tomatoes and mushrooms and simmer about 10 minutes. Add water if needed. Serve over cooked pasta.

  4. Serving size: 1 cup pasta and sauce
